I admit to never liking King’s cake…always tasted like icing and cardboard to me. If you could get me some boudin though…would be greatly appreciated.

It’s the inlaws that send us the cakes, and they like Haydel’s. Jeff, it’s really more like a gigantic cinnamon roll…if it’s fresh, it doesn’t taste like cardboard. If it’s a couple days old, you only eat it because it makes you think of home.

I’ve never had one from haydel… but, the good ones are like good gigantic cinnamon rolls…
if you get them from the grocery store in Dallas, they taste like air and dry, stale bread with a little bit of sugar on top.
There is a HUGE difference in the quality of king cakes… if you get the right one (Good Childrens and maybe a few others) you will love it.
I prefer mine plain… no filling.
It's not remarkable.
It’s basically cinnamon roll dough with confectioner’s icing. I recommend making the white icing a cream cheese icing to take away from the sweet. But, we all know king cake is about the baby and the screaming bold colors of purple, green and gold!
Boudin is my preference as well.
I make beignets and chicory coffee in honor of New Orleans on Mardi Gras.

…we can actually get Savoie’s andouille in the supermarket here. I have no clue what possessed them to offer it, or who buys it besides us, but at least I don’t have to try to make gumbo with kielbasa.

I'm in Louisiana but too far north for good boudin.
They haven’t a clue. Savoie’s sausage, andouille and tasso is available and what we rely on as as close to all the cajun smoked meats we’d get further south.
We make an annual trip to get such things around Opelousas, where I’m from.

Natchitoches meat pies are pretty yummy.
We can buy them frozen here, ready to bake or fry at home. I bake them with some olive oil brushed on them. They’re great that way.
Beyond that, nope can’t think of any imported foods, particularly from the best of Louisiana, that ever reaches us.

I've used calf liver, when I couldn't find the proper porcine product. You can still find that almost anywhere.
You can probably use just about any liver you want, but it might not be quite the same. Half the time when I make it, I don’t mess with the casing (which is a pain, you’re right). I just bake it in a casserole dish. I guess that makes it kinda like dirty rice, but damn, its tasty.

He used to be in Krotz Springs but bought Ray’s store in Opelousas. A boudin war broke out with Ray initially stopping production on his recipe when he sold the store to Billy, but then opened a new place and began selling again. Billy meanwhile decided to offer two recipes at his store, Ray’s old recipe plus his. Ask for his, it’s far superior.

i wish we can resolve the cap issues this year.. & hope to get a defensive impetuous.. something that gets that little edge to the limit..
i know it sounds void now.. but this team is the closest thing to greatness most of us will get to see.. we got to find a way to get back to the show..

I would make a special trip just to say thank you. Thank you for all you have done for the team. I have not seen what he has done for the community cause I live in Cali, but from what I heard, he has done great things. I would be upset if he left and I would still root for the Saints, but if they didn’t make it to the playoffs next year, we would all know why.
